This was the scene that a diverse group of foodies recently encountered when they gathered to share a gourmet brunch prepared by the talented Chef Nori at his restaurant, Café Shiraz, in Brownsville.

The culmination of this feast, which was serenaded by musicians, was a delectable mango-strawberry-liquor-infused “tres leches” dessert that was to die for. The added beauty of the gathering was that the dishes were cre-ated almost entirely from ingredients sold at the Brownsville Farmers’ Market and prepared for a fundraiser brunch to support the market’s efforts to reach lower-income folks in our community so they too can have access to fresh, locally grown produce.

The brunch was delicious, complete and very healthy. this wasn’t an exclusively vegetarian affair by any means as it featured fresh-caught Gulf shrimp, and locally grown tilapia, free-range chicken and beef. none of the guests left hungry, but neither did we feel as stuffed as we might normally following a meal of several courses.

Pam Walker, Houston-based author and food activist, was at the event signing her book “Growing good things to Eat in Texas” (TAMU Press, 2009). her book is a result of her research on folks who make a living as small farmers in Texas. She is actually in the Valley researching her next book about local farm and food communities.

“I am so fortunate to be here,” she said. “I am impressed with the level of support for your market and I am hopeful that it will continue to grow and benefit local farmers and the community at large.”

We each left the event with the gift of a small herb plant, donated by Debbie Cox, the “plant lady” at the Farm-ers’ Market. I walked out with my cilantro seedling in hand, marveling at how far the market, and Brownsville as a community, has progressed over the last several years.

You see, less than five years ago a group of individuals representing several local non-profit organizations, health clinics, hospitals, higher education, the city of Brownsville and the School of Public Health sat in a confer-ence room dreaming of a Brownsville Farmers’ Market.

I was present because the School of Public Health hosted the meeting, but more importantly because I selfishly wanted to live in a city that has a Farmers’ Market, having lived in other places where I experienced the benefits of eating yummy locally grown produce and shopping in a healthy, natural environment that allows you to chat with the people who grow your food.

The Brownsville Farmers’ Market opened in the fall of 2008 at Linear Park in the beautiful Mitte Cultural Dis-trict. If you have the misconception that this type of venture in a community such as Brownsville is immediately profitable, think again. It took all of the collaborating entities, individuals and institutions donating, volunteering, fundraising and grant-writing to get the market off the ground, and it continues to take enormous amounts of time and effort by volunteer board members, the city, the growers, Market Manager Jack Morfitt and others who make it happen every Saturday morning.

On the other hand, local folks have been able to make some money, or at least break even, on what they grow and sell, and there is enormous potential for generating even more income. Developing the “market for the Mar-ket” is a process as the community is educated about the benefits of locally grown produce, and farmers and backyard gardeners develop their strategies for growing volume and figure out what sells.

A couple of years ago organizers of the market realized the farmers needed more venues to sell in order to pro-duce more volume, so farmers’ markets opened on South Padre Island, in Harlingen and now several in the upper Valley. Price competition from the big-box stores and larger grocers is fierce, but the Farmers’ Market fills a unique niche in our community. It was never meant to replace larger stores but rather provide an additional alter-native with the added value of supporting the local economy and educating the community about where food comes from and the importance of fruits and vegetables in our diet.

In fact, the mission of the Brownsville Farmers’ Market (brownsvillefarmersmarket.com) is “to create an event that brings nutritional education, health services and fresh, locally grown produce to individuals living in South Texas,” which is why the market often features health screenings, community events, cooking demonstra-tions and other wellness activities.

The longer-term vision of the market is to “promote policy and environmental changes that make healthy foods and active lifestyles an easy choice for all families in South Texas.”

Current initiatives include a Farmers’ Market voucher program in conjunction with BISD Parental Involvement and Proyecto Juan Diego, research and education. Farmers’ Market Board President Belinda Reininger shared, “A grant in 2009 from the U.S. Department of Agriculture provided the ability for the market to accept electronic benefit transfers from the Lone Star card (food stamps) making healthy, locally grown foods more accessible to more of the population. Our customer surveys indicate folks from diverse socioeconomic backgrounds come to the market, are very satisfied with what they purchase and have actually increased the amount of fruits and vege-tables they consume since shopping at the Brownsville Farmers’ Market, which is a great benefit to their health.”

Back at the fundraiser, blue grass tunes plucked on the banjo, guitar and bass by the lively band Mr. Whiskey livened up the small space, and folks were recognized for their continued support of the Farmers’ Market, includ-ing Chef Nori and his staff for donating their time and talent to produce the delicious meal.

Folks mingled and chatted over glasses of mimosa made with fresh-squeezed, locally grown oranges. Cassandra Andrews, a UTB-TSC student and native of Trinidad, shared that the food and the market remind her of her Car-ibbean Island home where her mother grew most of what they ate, and local vendors sold fresh fruits and vegeta-bles on every corner. “in our small yard we had chickens, ducks, fruit trees and a small garden. Here and in Dal-las where I lived before, people eat so much processed food. The Farmers’ Market is awesome and reminds me of home.”

Keely and Michael Rodriguez attended the fundraiser because, they said, “We love the market and want to make it accessible to everyone in Brownsville. The market helps us introduce our kids to good, healthy food. We just want to support it any way we can and don’t ever want it to go away! also, we are big fans of Chef Nori and we knew this meal would be amazing!”

Even Chef Nori took time from the kitchen to share a few words with the crowd. “A local produce market is im-portant to every city. It helps me produce a nice product and I am glad to have it here.”

It’s hard to believe that Boulder’s vast population of fermented grape juice elitists would jump at the chance of buying such a humble product but that’s just half of the story. Colorado’s archaic and byzantine rules and regulations pertaining to the sale of alcohol in food and convenience stores may actually be a reason TJ’s might need to rethink their Colorado plans. Besides, Boulder is already overflowing with a variety of “natural,” organic, healthful and gluten-free food purveyors and there seem to be plenty of those “unnatural” food stores around as well.

For those who don’t know much about Trader Joe’s, it all began back in 1958 when Joe Coulombe opened his first store in Pasadena, California known back then as Pronto Markets. Joe is a rather colorful character who obviously knew a little something about developing loyalty along with cultist behavior. His concept quickly grew into a chain of stores that developed a large following of health conscious and alternative lifestyle patrons. Joe later changed the name of his growing empire by creating the perception of world-wide traders searching the seven seas for various culinary items to stock on Trader Joe’s shelves. Incidentally, that’s where the Hawaiian shirts worn by store employees at all TJ locations came from.

Although the firm has a California identity, that’s far from reality. the chain is privately owned by Germany’s highly secretive Albrecht family that shuns publicity and reveals little about its operations or earnings. with around 360 stores and over $8 billion in annual sales, TJ’s appears to successfully compete with Whole Foods for good earnings, sales, and growth opportunities. the secret to TJ’s success is in limiting its offerings and private branding most of the items they sell. nearly 80 percent of its shelves are stocked with these store-branded items. Where larger stores may offer up to 50,000 different items and a wide variety of alternative choices, TJ’s limits their items to around 4,000. the company closely guards who actually makes their branded products. in 2010 Fortune Magazine ran a lengthy article about TJ’s and discovered that their popular pita chips were being produced by a subsidiary of PepsiCo. ScienceDaily (Feb. 21, 2012) — Researchers at the University of Pittsburgh have coaxed gold into nanowires as a way of creating an inexpensive material for detecting poisonous gases found in natural gas. Along with colleagues at the National Energy Technology Laboratory (NETL), Alexander Star, associate professor of chemistry in Pitt’s Kenneth P. Dietrich School of Arts and Sciences and principal investigator of the research project, developed a self-assembly method that uses scaffolds (a structure used to hold up or support another material) to grow gold nanowires.

Their findings, titled "Welding of Gold Nanoparticles on Graphitic Templates for Chemical Sensing," were published online Jan. 22 in the Journal of the American Chemical Society.

"the most common methods to sense gases require bulky and expensive equipment," says Star. "Chip-based sensors that rely on nanomaterials for detection would be less expensive and more portable as workers could wear them to monitor poisonous gases, such as hydrogen sulfide."

Star and his research team determined gold nanomaterials would be ideal for detecting hydrogen sulfide owing to gold’s high affinity for sulfur and unique physical properties of nanomaterials. They experimented with carbon nanotubes and graphene — an atomic-scale chicken wire made of carbon atoms — and used computer modeling, X-ray diffraction, and transmission electron microscopy to study the self-assembly process. They also tested the resulting materials’ responses to hydrogen sulfide.

"to produce the gold nanowires, we suspended nanotubes in water with gold-containing chloroauric acid," says Star. "as we stirred and heated the mixture, the gold reduced and formed nanoparticles on the outer walls of the tubes. the result was a highly conductive jumble of gold nanowires and carbon nanotubes."

To test the nanowires’ ability to detect hydrogen sulfide, Star and his colleagues cast a film of the composite material onto a chip patterned with gold electrodes. the team could detect gas at levels as low as 5ppb (parts per billion) — a detection level comparable to that of existing sensing techniques. Additionally, they could detect the hydrogen sulfide in complex mixtures of gases simulating natural gas. Star says the group will now test the chips’ detection limits using real samples from gas wells.

Also involved in the study were Dan Sorescu, research physicist at NETL, who performed computational modeling of the gold nanowire formation; Mengning Ding, a Pitt graduate student in chemistry, who performed experimental work and synthesized and characterized gold nanowires and measured their sensor response; and Gregg Kotchey, a fellow Pitt graduate student in chemistry, who synthesized some of the graphene templates used in this study.

On a Saturday afternoon in the middle of February, hundreds of men and women gathered in their swimsuits on the sandy beaches of Boulder Reservoir.

Beach balls flew across the sunny sky as fountains sprayed through the water.

But this was no pool party. It was a plunge party.

With the motto “Freezin’ for a Reason,” more than 300 people plunged into the reservoir’s 37-degree water Saturday to benefit Colorado Special Olympics.

Hundreds more cheered the plungers from bleachers as the number of participants more than doubled from last year’s event. All proceeds from the fourth annual Law Enforcement Polar Plunge will benefit the more than 11,000 Colorado Special Olympics athletes.

Boulder police Sgt. Dave Seper was the first to dip into the frigid waters with his group the “Boulder Copsicles.” Seper held hands with a Special Olympics athlete and hoisted the Special Olympics torch called the “Flame of Hope.”

“The first thing that came to my mind when I hit that water is, ‘How fast can I get out of here?’” Seper said. “This is my fourth time I’ve done the plunge, but I think what gets me most prepared for this plunge is having a bad memory.”

Amy Turner, vice president of marketing for Special Olympics Colorado, said the Boulder plunge was the third and final plunge of the year. the other two took place in Colorado Springs and at the Chatfield Reservoir near Denver.

While fundraising isn’t over until the end of February, Turner said she expects to raise double the revenue of last year’s plunges with more than $200,000 from the three events and $45,000 from the Boulder plunge alone.

“This plunge is a team effort and we get all kinds of people to participate,” she said. “That’s what makes this event really run. I plunged for the first time in Colorado Springs and I was so anxious because I didn’t know what to expect. I was really nervous, but felt I accomplished something when I finished.

“Really, though, I was just relieved I had survived.”

The Boulder Fire Department’s dive team was on hand for safety. Two firefighters were in the water with ice rescue suits and one was on standby with full scuba gear.

Dozens of teams raced through the water, including groups representing the Boulder Fire Department, the University of Colorado’s ROTC unit — which slow marched into the water with military flags — and even Chip, CU’s buffalo mascot, who wore a Hawaiian shirt.

While some “Tebowed” and others did flips into the water, all teams were judged on style, spirit and costumes. the CU dance team earned the title as most stylish. the ROTC group won most spirited and the Lottman Oil Company, who dressed as hippies flashing peace signs and prancing slowly into the water, won best costume.

A designated area called the “chicken coop” was set aside for those who didn’t want to plunge. Jen Knudsen with the Arvada “Fill the Coop Movement” was encouraged to raise money for the Special Olympics for people who wanted to donate but preferred to stay dry.

“Most of us here in the coop are chickens, but we still had some in our group plunge anyway,” Knudsen said. “You couldn’t get me in the reservoir. well, maybe if we got some three-digit donations.”

Former CU Buffs quarterback and Polar Plunge judge Charles Johnson seemed to have a similar sentiment.

“I have never plunged and never will,” Johnson said. “Besides, I can’t swim. I’m really looking for style in all these plunges. I had no hesitation getting involved in this event, though. I love Boulder and it’s great to have a small part in this cause for raising funds for the community.”

Special Olympics athlete Matt Smith, who competes in baseball and weightlifting, said he had no problem jumping into the reservoir.

“I was good and not nervous,” Smith said. “It was fun, but it was really cold, though.”

Hoping to set a standard for others in the industry to follow, food-service giant Bon Appetit Management Co. announced today that it will purchase pork, liquid eggs and veal only from producers who follow more humane animal agricultural practices.

“I really believe that everything stems from factory farms. Everything from the issues of safe food to public health to the dead zones in the ocean to what seeps into the waterways. It’s disgusting,” said Fedele Bauccio, co-founder and chief executive of Bon Appetit, in a telephone interview. “I think we now are large enough as a company that we can take a stand and say, ‘That’s it, no more. We’re not going to do this anymore.’ ”

The size of Bauccio’s company is, in part, what gives Bon Appetit’s announcement its weight. Bon Appetit operates 400 cafes in 31 states, serving about 130 million meals a year. it runs cafes at American University, Gallaudet University and Georgetown Law, among other Washington area locations.

“Hopefully, other companies will be behind us and say, ‘Let’s take a stand, too,’ and we can then slowly try to change the system,” Bauccio said.

In 2009, Bon Appetit drafted an agreement with the Coalition of Immokalee Workers, in which the groups spelled out the exact working conditions and code of conduct expected from growers if they wanted Bon Appetit’s business. The agreement came about after journalist Barry Estabrookexposed the near slaverylike conditions of Florida tomato workers.

“The growers did not step up right away until we boycotted those tomatoes,” Bauccio noted. “Finally, after three or four months, they stepped up and other companies followed us, and we changed the system down there. It’s not perfect but it’s . . . a lot better than what it was.”

Bauccio understands that changing animal agriculture in America will be much harder to do — and will take much more time. it will require, he noted, re-educating farmers and helping them to change their practices. it will also require, Bauccio adds, that companies like Bon Appetit guarantee to buy a set amount of meat from farmers to help support their efforts to move away from factory farming.

Bon Appetit’s goal, the founder said, is not just to source meat, poultry and eggs from producers who adopt certain practices. It’s to purchase meat, poultry and eggs from producers whose entire agricultural systems have been inspected and approved by one of four animal welfare programs: Animal Welfare Approved, Food Alliance, Humane Farm Animal Care or Global Animal Partnership. The company hopes that at least 25 percent of its suppliers will be certified by 2015.

Bauccio wanted “third-party certification, so that people don’t think that it’s just lip-service and I’m making up my own certifications. I want to make sure we have a third party that looks at these suppliers and says, ‘Yes, they meet these standards,’” he said.

“It’s all about animals in their natural behavior. and believe me, I’m not a vegetarian. I like meat and a good steak once in a while,” Bauccio added. ”but I think that during the time that these animals are alive . . . we’ve got to do a better job of what we’re doing before we decide it’s time for them to be our food.”

The founder’s stance on animal welfare is an outgrowth of his two-year stint on the Pew Commission on Industrial Farm Animal Production, during which Bauccio visited many concentrated animal feeding operations and saws how these CAFOs affected the animals, the environment, the workers and the communities around them.

“The light bulb went off in my head and I said, ‘if we’re going to become a sustainable company, we really have to care about these things.’ ”

Bauccio has taken heat from his competitors for his stances in the past, and he expects it again this time.

“look, they told me I was crazy when I started this company the way I did 25 years ago. . . . I’m not some Berkeley hippie. I do wear a tie and suit,” Bauccio said. “I’m sure they’re going to think I’m nuts [for the animal welfare announcement], but I don’t care. This is the right thing to do. I know it is.”

There’s only one word to describe this year’s men’s basketball season — dismal.

As the final two games of the season approach, the Lumberjacks have performed well below season expectations, finishing dead last in the Big Sky Conference (BSC) and compiling five wins on the year thus far. they were projected to at least qualify for the conference tournament, even during a time labeled as a transition phase.

Perhaps the biggest story out of the year was the resignation of head coach Mike Adras, who abandoned his post amid allegations of conduct detrimental to the team and violating NCAA regulations. he was replaced by Dave Brown on an interim basis, who won three of his first four games at the helm, but has not won in a 15-game span.

If the previous sentence does not make it obvious, then this should — Dave Brown should not be the head coach next year.

With that belief comes the feeling the university needs to make an impact hire to bring credibility back to the program.

So far, there have been three names to pop up in recent weeks — ASU assistant Scott Pera, Oregon State assistant David Grace  and current Grand Canyon University  head coach Russ Pennell.

All three have their merits: Pera has been at ASU for five years now and recruited current NBA player James Harden to the Sun Devils, Grace is in his fourth year at OSU and has been a successful head coach at every stop he’s made and Pennell took over for Lute Olson at Arizona during the 2008-09 season, leading the Wildcats to a Sweet 16 appearance before being hired at GCU.

Pennell would be the ideal candidate. he has already coached a Pac-12 team to the Big Dance, plus he has made tremendous strides at GCU, a school looking to move up to the Division I level next year. With that in mind, he has only spent one year as the Antelopes’ head coach and with the attempted move to D-I, it looks like he may be out of the question.

Pera, serving under Herb Sendek, has produced a coaching tree including current Arizona head coach Sean Miller and Ohio State head man Thad Matta. Pera has also been in charge of recruiting for ASU since joining the Sun Devils’ staff, and could bring quality players from the Phoenix area, a market NAU consistently misses out on. However, Pera has only been a head coach at the high school level and with ASU currently in a downswing, he may not be the best option.

Up at OSU, Grace has assisted in rebuilding a program that had been a bottom-feeder in the Pac-12. the Beavers have compiled quality seasons the last few years, including post-season tournament wins. he was a successful high school coach and has experience coaching in the BSC, having spent time at Sacramento State. he is a decorated military veteran and carries a strong presence with him, both on and off the court and his leadership experience could provide a strong boost to an unstable program.

NAU needs to pursue these three heavily and focus on these three alone. all three have their pros and cons associated with them, but all three would bring stability to a program that needs to regain its luster. If the administration chooses to go after someone else, hopefully they do not chicken out and go for a “safe” hire.

Pastured poultry is a complex routine to recall organic chicken feed.
